Baked Sole Fish Fillets with Rice and Lemon

Spiced Mediterranean style and baked in a buttery lime sauce and topped with fresh dill, you can almost taste the Mediterranean in these fish fillets!

  • 1 bag Siblou Sole Fillets
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lemon (juice)
  • 1 lemon (zest)
  • 2 garlic cloves (thinly chopped)
  • 4 tablespoons olive oil
  • 2 tablespoons capers
  • 1 cup of Basmati rice
    1) Place the Siblou Sole Fish Fillets on a baking tray and add the olive oil on top. 2) Add some salt, pepper, capers, garlic, green onions, dill & lemon slices on top. 3) Bake the sole fish fillets in the oven for 15 minutes at 180°C. 4) Start preparing the Basmati rice. How to prepare the rice? - In a large saucepan, bring water to a boil. - Add the Basmati rice, a pinch of salt and stir. Bring back to a boil. - Once boiling, reduce to a simmer and cook for 10 minutes partially covered. - Drain water well and place back into warm pan. Cover and let sit OFF HEAT for around 10 minutes until ready to serve. 4) Take the sole fish fillets out of the oven and serve alongside with the prepared Basmati rice.
